I have now been vegan for over 6 months! I have never felt so good!! I have to thank all of the incredible people in my life who have encouraged me through the transition from vegetarian to vegan, while also educating me on the benefits of a vegan diet, lifestyle and compassion for animals and the environment. I decided to be a vegetarian when I was very young - 10 years old - and to be completely honest, my family wasn't very happy about it. Living in a home where my parents believed a healthy diet isn't possible without animal products, it feels incredible to know that so much research and news has come to light in the past 14 years, ultimately giving my family some peace of mind. I know that now I am not only doing some great things for my own body and overall health, but I am also helping the future of the planet through my transition to a full vegan.
With that being said, one of my favorite YouTube personalities is Ellen Fisher, a vegan mama who lives in Hawaii with her vegan family and shares her vegan recipes, lifestyle choices and insight on what its like to live a vegan life and raise her children vegan. It's definitely something I am considering for my (potential) future family.
When I was in Oahu, Hawaii (we stayed in Waikiki Beach) I was eating delicious Acai bowl every day!! I even came across a Pitaya bowl (pink dragonfruit) from this resto called HEAVENLY and I fell in LUV. So sweet! So fresh! So delicious! There really is nothing better. In the meantime, I have been attempting to perfect the perfect Acai sorbet here at home - the trick: use as a little liquid as possible.
